
These mini vegetable pancakes make excellent snacks for baby-led weaning babies, toddlers, kids and even teens. My 15-year-old takes these in his lunch box for a protein hit and I like them myself for afternoon snacks. You can easily substitute the flour to make them gluten free also. And they are happily vegetarian, though not vegan unless you substitute the eggs for grated sweet potato. I use organic and locally sourced ingredients wherever possible – seasonal produce is good for the seasonal rhythms of the body too.
Ingredients
3 eggs
3 tablespoons spelt flour
1-2 shallots/spring onions finely sliced
1/2 carrot finely grated
1/2 zucchini/courgette finely grated
crushed garlic to taste (or you can use a good quality garlic powder like this one)
crushed ginger is another/additional option
2 tablespoons of butter/ghee/olive oil or any combination of those
(Note, the amount will vary depending on whether you’re using a non-stick pan)
Method
HOT TIP: Make the mixture in a pouring jug (even a measuring jug) then just pour the mixture straight from the jug into the pan.
Combine all ingredients except the butter/oil in a bowl and mix thoroughly.
Warm up the frypan or large pot over a low to medium heat, preferably use a pan or pot with a thick bottom. Add some of your preferred greasing option. I like to top up the butter or ghee a little after each batch to keep everything moist.
Pour or spoon dollops of mixture into the pan (usually you can fit at least three or four small pancakes, sometimes five if your frypan is large enough). Once they are browning underneath, use a thin spatula to flip them over. The second side usually cooks pretty quickly. Remove the pan from the heat for a moment to stop it overheating as you remove the pancakes onto a plate. Re-grease the pan a little, pour some more in, place back on the heat and repeat until mixture is all used up.
Once cooked these freeze well between grease-proof paper layers to stop them all sticking together.
